This weekend I was really craving some good ole' mac & cheese. I didn't have any in the house and I certainly didn't want to leave the warmth of my home just for some macaroni. So I looked at a few recipes on Pinterest to get the basic idea and then decided to wing it. It ended up being super easy! Here's a rough recipe based on what I put in.
Note: I didn't measure anything so these are all a rough guess.
2 cups noodles
1/4 cup chicken stock
1/2 cup heavy whipping cream
2 tbsp flour
2 cups shredded cheese
1/4 cup panko
To start, preheat your broiler. You'll need this for the last step. If yours doesn't take long to heat up, wait until the noodles are cooked before turning it on.
Boil the noodles till cooked through the way you like them. I did about 12 minutes.
While the noodles are cooking, whisk together the chicken stock, heavy whipping cream, and flour.
When the noodles are done, drain them, and mix in the cheese. I put in about 3 generous handfuls of shredded cheese. Mr g thought it wasn't cheesy enough but I thought it tasted just perfect! Once the cheese is pretty well melded into the noodles, stir in the liquid mixture to thicken it all up and add more of a creamy factor.
Next, move all the noodley-goodness to an oven safe serving dish. Sprinkle panko crumbs evenly on top and place under the broiler. Now, most important part, watch it like a hawk! Do not get distracted! Do not be deceived by the broiler. Once it starts looking brown, grab those hot pads and pull it out. The panko should be cooked enough to add a nice little crunch. And voila!!
Eat it while it's still warm. Bon appetit! Super, easy homemade mac & cheese!
